Chilean Red Wines

Merlot
Its flavor profile is similar to Cabernet Sauvignon, yet Merlot tends to be less distinctive and slightly more herbaceous overall in both aroma and taste. On the nose one is likely to get plums, mint, or black cherry. The tannins are not as robust as in a Cabernet Sauvignon. As Merlot evolves, look for leather and roasted meat flavors to come out.

Cab Franc
Succulent dark cherry, floral, plum with a hint of herb flavors. Deep ruby color with aromas of cherry and violet (along with toasted Oak when finish in a barrel ) . It's a highly aromatic variety and can make the wine more fragrant. Typically used as a blending grape in winemaking, Cabernet Franc has recently established its own varietal identity.

Cabernet Sauvignon
Its berries are small and spherical with thick, black, tough skins. Acids and tannins help form the basis for its structure, complexity, flavor and longevity. Flavors of the fruit have been described as currants, raspberry, pepper and cedar when young, and chocolate, leather, mushroom, cinnamon and barnyard when the wine reaches its maturity.

Syrah
Also known as "Shiraz" in Australia, this grape will produce a dark, rich, full-bodied wine with a chocolate aroma. Chile has come a long way in growing high quality grapes in this varietal. If you love syrah, this is a great choice, the flavor characteristics in the "Chilean Version" are more bold and pronounced.

Malbec
Has characteristics that fall somewhere between Cabernet Sauvignon and Merlot. A mid-season ripens grape, possesses plum- and anise-like flavors, and is used to add dark rich color, full bodied and tannins to a blend. While traditionally a blending grape, excellent bottles of stand alone Malbec are being produced in the U.S., Chile, and Argentina.

Carmenere
It is a grape with depth of color and, in ripe years, flavor that can range from herbal to gamey and add complexity and interest to blends. Recognize the huge blackberry taste with low tannins that make Carmenere an excellent pairing for a wide range of foods.

Chilean White Wines

Chardonnay
This premier Chilean varietal grape yields a full bodied moderately acidic, dry, austere wine. Flavors can be described buttery, creamy, and smoky. Excellent with fruit and cheese. Chilean versions tend to be richer and fruitier.

Sauvignon Blanc
This pale lemon-yellow wine has an appealing nose of succulent, ripe tropical fruits, with hints of grass and minerals. The texture on the palate is classic Chilean, quite weighty, with a 'fat', creamy feel to it, but with good balancing acidity. Loads of ripe melon and green apple, leading into a fresh, slightly tart, mouth watering finish. This is what Chilean Sauvignon is all about.

Viognier
Viognier boasts a complex bouquet of ripe stone fruits, peaches and apricots with fine smoky notes. The palate reveals a cornucopia of exotic fruits with a creamy, persistent finish. Characteristic floral aroma. Fruity, flowery and spicy aromas may also be present, especially peaches, apricots and violets. The actual scents vary depending on the age and growing conditions of the vine. Despite their sweet scent, Viognier wines are dry with a creamy taste.

Pinot Gris
Pinot Gris / Pinot Grigio is usually delicately fragrant and mildly floral with lightly lemon-citrus with hints of melon and apples flovors. Medium bodied wines , refreshed by cleansing acidity.

Chilean Red Blends

Create Your Own!
Choose up to 3 of your favorite varietals of likeness and go for it. For example, blend Cabernet, Merlot, and Malbec.

Bordeaux
33% Cab Sav, 33% Merlot, 33% Cab Franc
A favorite French blend, bursting with berry and character, accompanied by a medium tannic body.

Merlot - Cab Sauv - Syrah Blend
60% Merlot, 20% Cab Sauv, 20% Syrah
A richly concentrated red blend, offering a seamless balance of power and elegance. Layers of ripe plum, black cherry and wild berry flavors are highlighted by hints of mocha and spice across a long, silky finish.

Merlot- Cabernet Franc - Carmenere
60% Merlot, 20% Cabernet, 20% Sauvignon and Carmenere
This blend has heady aromas and flavors of plum, blackberry, spice, and plum blossom wrapped up in a satiny texture with a spicy aftertaste.

Cabernet Sauvignon - Cabernet Franc - Carmenere
70% Cabernet Sauvignon, 20% Cabernet Franc, 10% Carmenere
Good looking glossy red-black wine. The nose is loaded with sweet cassis, berry fruits, and some hints of Cabernet complexity with notes of pencil lead and old furniture. A nicely textured palate is accompanied by sweet fruit, firm tannins, correct acidity, with an overall good balance. Delicious.

Cabernet Sauvignon - Merlot - Cabernet Franc Blend
50% Cabernet Sauv, 30% Merlot, 20% Cab Franc
Has deep color, herbal and plum aromas, which are echoed in the flavors that smooth out and pick up touches of blackberry.

Cabernet Sauv - Malbec
70% Cab Sauv, 30% Malbec
Excellently crafted blend of 2 classic . Berry-driven by Cabernet Sauv and added earthy tones by Malbec . Experience layers of fruit and tanins, a complex structure when the wine reaches maturity. A classic!

Merlot - Carmenere Blend
80% Merlot, 20% Carmenere
All the great things we love about Merlot with a bit more sophistication and an added depth of flavor and color. The addition of the Carmenere makes it a "Chilean Classic."

Carmenere - Malbec - Syrah Blend
60% Carmenere, 20% Malbec, 20% Syrah
This blend brings Carmenere's depth of color with strong blackberry flavors along with a hint of plum- and anise-like flavors. a dark, rich, full-bodied wine with a hint chocolate aroma.

Cabernet Sauvignon - Carmenere Blend
80% Cabernet Sauvignon, 20% Carmenere
The blend of Cabernet Sauvignon with Carmenere makes for a intense wine with plenty of "backbone". This is a good solid wine for the Cab-Lover. The Carmenere really adds a "Chilean Style" to the wine.

Cabernet Sauvignon - Merlot
80% Cabernet, 20% Merlot
The classic blending of Cabernet and Merlot produces a bold wine with lots of tannic structure, yet has the smoothness and complexity that the Merlot "brings to the table". Typical Bordeaux style blend.

Merlot - Cabernet Sauvignon
80% Merlot, 20% Cabernet
"Everybody's Wine" with a blend of Merlot and Cabernet. This wine will have a young approachability that comes with Merlot and still will have a bit of "something else" going on.

Syrah - Malbec
70% Syrah, 30% Malbec
The Malbec adds musky, earthy tones to an already spicy Syrah.

Syrah - Cabernet Sauvignon
70% Cabernet, 30% Syrah
This combination produces a robust dry red wine with a kick. For the dry wine lover.

Syrah - Merlot
50% Syrah, 50% Merlot
This is an excellent wine for the Syrah and the Merlot fan alike. The Merlot really softens the wine while the Syrah adds that spice!

California Red Wines

Barbera
A grape that produces a red, deep colored, full bodied wine. This grape produces a dry somewhat tannic wine that ages well and softens with time. This wine has a high alcohol content and can exhibit a ripe currant flavor with a hint of smokiness.

Cabernet Sauvignon
Fruity flavors are typically described as black cherry and currant. The jewel in California¿s crown, this varietal grape produces a dry red wine. One of the most popular grapes.

Carignane
Predominately used in blending this grape is full of tannin and is heavy bodied with medium acidity and color.

Grenache
Naturally sweet, fruity, with very low tannin. This grape is used to produce some of the best Rose wines in France.

Merlot
Distinctive aromatic, spicy red table wine is produced from this varietal grape. An abundance of fruit and velvet-like quality. Limited availability.

Petite Syrah
These grapes produce a deep colored, robust, peppery wine that packs plenty of tannin and has good aging ability.

Pinot Noir
Originally from France where it is used in all of the great red burgundies. This grape produces a wine that is clear, brilliant, and medium to deep red in color. It is rich, velvety, and full of flavors such as cherries, raspberries, and strawberries.

Alicante Boushet
Makes a dry, dark, full bodied wine.

Sangiovese
The dominant grape in Chianti, it is usually blended with 20% white Malvasia in Italy. The California grape is lighter in color and can be blended with Zinfandel or Cabernet. This wine needs long aging in the barrel.

Syrah
A cloned cousin of Petite Syrah, this grape makes a full bodied tannic wine. Make it straight or use it in any blend.

Zinfandel
Three styles of red wine are produced from this varietal grape depending on what region the grape comes from. Styles include: a light spicy flavor with a berry-like aroma, or a full bodied, oak aged, berry-like, dark colored, or a Rose style White Zinfandel.

Valdepina
This varietal grape originated in Spain and is aromatic, dark, smooth, and velvety.

Mission
Makes a light to medium dry red wine.

Ruby Cabernet
Dark colored, smooth bodied red wine. Great with Pasta.

California White Wines

Chardonnay
This premier California varietal grape yields a full bodied moderately acidic, dry, austere wine. Flavors can be described as buttery, creamy, and smoky. Excellent with fruit and cheese.

White Malvasia
Italian grape that produces a dry white table wine used in Chianti or made straight. If made straight it is a heavy wine similar to Chardonnay. Can stand up well to new oak.

Viognier
Produces a wine with a bright color and a rich texture. Tasters often refer to peaches and apricots when describing this wine. This aromatic wine should be consumed in its youth.

Pinot Grigio
Excellent Italian style white wine.

Riesling
A classic German grape variety with the potential to make a wine with tremendous flavors. Light in body and low in alcohol yet intensely flavored with a zesty bouquet.

Sauvignon Blanc
A grape producing white table wines ranging from sweet to dry. When considered dry it is excellent with seafood or poultry. When considered ¿sweet¿ it is a great sipping wine when chilled. Sometimes the Fume` name will appear before or after the Blanc which brings a drier, grassier, or smoky taste.

French Colombard
Produces a crisp, moderately dry, spicy, white wine with floral attributes. Used for blending and sparkling wine. Low acidity, high alcohol.

Muscat
Produces outstanding sweet dessert white wines. Forms the basis for Asti Spumante and other Italian sparkling wines. Persistent perfume, musk, and ripe grape characteristics.

California Red Blends

Cabernet - Zinfandel Blend
80% Cabernet, 20% Zinfandel
The addition of Zinfandel will insure good color and will add more flavor to the wine.

Merlot - Cabernet Blend
80% Merlot, 20% Cabernet
This blend will add color to the Merlot.

Cabernet - Merlot Blend
80% Cabernet, 20% Merlot
Typical Bordeaux style blend.

Chateauneuf Du Pape Style
This wine is a mixture of principally Grenache, which gives mellowness and alcohol, Cabernet Sauvignon, and Alicante.

Red Meritage
Assorted mixed blends. A favorite is Barbera, Nebbiolo, and Petite Syrah.

Zinfandel - Syrah - Petite Syrah Blend
60% Zinfandel, 30% Syrah, 10% Petite Syrah
Everyone's favorite blend which produces full bodied, oak aged, dry, peppery wine that packs plenty of tannin and has good aging ability.

Barolo
A great blend of Nebbiolo which is rich in color and Barbera which is lighter and full of flavor. This is one of the finest wines in the Piedmont region of Italy.

Chianti
A strong, bold, red wine that goes well with well-seasoned foods. A blend of Sangiovese, Black Malavasia, Barbera, Petite Syrah, and Cabernet.

California Old Fashioned Red Blends

Alicante - Muscat Blend
90% Alicante, 10% Muscat
An Old Timers favorite. A dry dark red wine with a kick.

Muscat - Alicante (Blush) Blend
80% Muscat, 20% Alicante Another Old Timers favorite that produces a blush wine.

Cabernet - Petite Syrah Blend
70% Cabernet, 30% Petite Syrah
This combination produces a robust dry red wine with a kick. For the dry wine lover.
